Things Remembered

Today is a day to remember and honor those that have served and given their lives for our country. Many of us will be outdoors, manning the barbecue grill, and pounding beers. Others will be in foreign lands, manning a combat vehicle, or pounding the pavement to keep their countrymen safe. Some may lose their lives or limb. Let’s not forget them.

Dad in Vietnam

My Dad served in Vietnam. While most boys were drafted to go, my father volunteered. I have the highest respect for his bravery, and am so thankful for his safe return. Today, I will honor the memory of those that sacrificed their lives.

I’m sure that Dad is going to be grilling today. My favorite childhood memories involve barbecues and get-togethers. Daddy loves to throw down on some ribs and chicken!

In honor of Dad, our Pre Memorial day dinner:

Tomato Salad with Spinach and Goat Cheese

Honey Balsamic Chicken & Roasted Sweet Potato Salad

One of Dad’s favorite vegetables is the sweet potato. Sweet potato salad is a delicious alternative to traditional potato salad. Roasted sweet potatoes are even better!

Here’s my recipe:

2 medium-sized sweet potatoes, sliced into 1/2″ thick rounds

1/4 cup of sunflower seeds

1/4 cup of dried cranberries

2-3 tablespoons of mayo

1/2 cup of sliced onion (red or Vidalia)

1 tbsp. Apple Cider Vinegar

Toss the sweet potato in about 1 tbsp. of olive oil, sprinkle with salt and pepper

Grill on both sides for about 10 minutes, or until soft…not mushy or burned

Cool

Whisk mayo and vinegar together

Cut potatoes into cubes

Gently fold into mayo and vinegar, add onions, sunflower seeds, and cranberries

Refrigerate for about 30 minutes

Enjoy!

A Day of Ice and Fire

I’m such a Game of Thrones nerd! Such a great saga, and full of strong female characters. LOVE IT!

Speaking of female characters, yesterday I channeled my inner “40′s housewife”. I bought some fresh produce from the farmer’s market, stocked the pantry, and made a bangin’ dinner! I tend to over purchase when it comes to fruits and veggies, so I decided to freeze some.  The web is loaded with several suggestions on how to prepare and store your produce.

The method I chose recommends “blanching” your veggies and then freezing. Check out the video below. The host is something else! I used a steaming basket instead of submerging my vegetables into the boiling water.

Now I can enjoy fresh veggies, out of season.

The second part of the day involved FIRE. The weather around here is perfect for outdoor fun. Fresh veggies + 80 degree weather= Grilling outdoors!  This is one of my favorite activities, and I must add that Husby is touched with the pyro gene.

Dinner consisted of Herb and Peppered Pork steaks, grilled vegetable salad with pesto, and grilled corn. Super tasty, and somewhat on the Paleo diet side of things; but definitely one “clean” feast!

Recipe in a Hurry

As promised, here is the recipe for yesterday’s frittata.

1) Three large eggs, scrambled with skim milk.

2) A handful of broccoli, sliced turkey breast,  and 1/4 cup of sliced onions, sauteed in veggie oil, until softened…not soggy!
*use any veggies you’d like-spinach, zucchini, whatever suits your fancy!

3) Add eggs, season, and top with shredded cheese. I used sharp cheddar; but goat cheese or feta crumbles would be quite tasty.

4) Remove from stove top, and place in a 300 degree oven.
5) Walk dogs for 30 minutes
6) Remove from oven if the eggs appear firm.

7)Enjoy!

Feast in a Hurry

It’s Fall Break, and I have spent most of the morning catching up on some chemistry topics. I had hoped to spend all day studying; but being the team player, I agreed to help a friend out. She’s 5 months pregnant and has a slew of Dr. appointments today, sooo I am covering her shift.

Since I spent most of the morning studying, I needed to whip up a quick meal. I also needed to get the dogs out for a walk. My answer was a quick frittata! What better way to knock out two birds? How about 3 eggs, broccoli, onions, and sharp cheddar!
