The Most Wonderful time of the Year

It’s official. Its Fall!!! This is my favorite time of the year. I love the change in weather. All though, today, there’s a ton of rain falling out of the sky…and supposedly a piece of a defunct satellite!

Today is going to be a lllloooooonggg day of work, on-call, and studying. I decided to pre-emptively reward myself and fellow workers with some Fall themed cookies. I mentioned in a previous post that I was going to do a remix on some Pumpkin Oatmeal cookies.

The original recipe comes from My Baking Addiction. It has a great backbone recipe, and I just added a little more structure and crunch. The recipe also called for “pumpkin pie spice”. Sounds a little vague; so I made my own spice combo. Ground ginger, clove, nutmeg, and mace. Very aromatic!

Chopped dried cranberries and chopped walnuts.

These cookies are awesome! They would be perfect for Thanksgiving snacking or with a side of Pumpkin Spice Latte!

 

 

 

Fall-ing into it

Lately I feel like I’m reeling into an endless fall. What with the craziness of school, holding down a job, and trying to make time for friends and family. Let’s not mention adjusting to living on a student’s budget…uuggghhh! I didn’t even get to partake in the Missoni Madness at Target! (Major Pouting face)

Well, I’m just hoping that sucking it up for a couple of years, as a broke-ass student, will pay off. Maybe I’ll score a for real deal Missoni piece. Like this

And yes…preferably vintage!

One thing I will gladly fall into are the flavors of  Fall. I’m brainstorming on a few things “pumpkin”.

The recipe seems simple enough; however, I’d probably nix the dried cherries. I most certainly would remix them with a dried cranberries-in homage to Thanksgiving dinner, and maybe play with adding nuts. I’d also try them with whole wheat flour.

Of course Fall wouldn’t be Fall without a fire and a good beer! I’m looking forward to a good and spicy Pumpkin ale…
