Husby surprised me with a date night proposal! We are heading to the gym. Today’s training is 2 miles, which I would normally run on pavement; but I don’t want to pass up a fun date.
In return, I’m making Beef & Bulgur Stuffed Peppers.
Recipe:
Preheat oven to 350 degrees
4-6 Red and/or Green bell peppers (decapitated)
1 lb. of lean ground beef
1 cup of Bulgur wheat (cooked)
1 cup of chopped zucchini
1/2 cup of chopped broccoli
1/2 cup chopped red and green peppers (use the tops of your stuffing peppers)
1/2 cup chopped onion
1/4 cup tomato paste
1/2 cup water or chicken stock
1/2 tbsp dried oregano
Salt, pepper, garlic powder to season
Shredded parmasean or whatever cheese you fancy
Heat up 1 tbsp of olive oil in a large sauce pan.
Sautee onions, peppers, and veggies until softened.
Add ground beef, cook until browned.
Stir in tomato paste, then add water, and season to taste. Simmer for about 5 minutes.
Soften bell peppers in boiling water, or microwave for about 1 minute.
Mix bulgur into meat and veggie filling.
Spoon into bell peppers, and arrange in a baking dish.
Top with cheese, and allow to bake for about 20 minutes.
