Hot Summer, Cold Noodles

Summer is already a scorcher! Aaaaand, our AC is out!!! Don’t panic, we have a handy little window unit for a little relief. Having limited cool air in the house has been a real motivating factor. We seem to be spending more time outdoors, on the patio, and at the gym. See, it’s not so bad.

This weekend is sure to deliver the swelter. I can’t imagine that I’ll be doing much cooking in this heat. Here’s a recipe for a cold noodle side dish.

1 tbsp. Almond butter

1 tbsp. Natural Peanut butter (sugar-free)

3 tbsp. Sesame Oil

2 tbsp. Rice Vinegar

2 tbsp. Low Sodium Soy Sauce

1/2 tbsp. Sugar or Alternative Sweetener

Whisk together and set aside.

1/4 cup sliced scallions

2 cups of chopped raw broccoli

Boil 1 package of Soba noodles for about 7 minutes. DON’T  OVER COOK!

Quickly rinse in cold water, and allow to cool.

Toss noodles and vegetables in peanut sauce. Refrigerate for about 3 hours.

This is a great side dish for stir fried pork, chicken, shrimp, or tofu. Add a few other veggies to make it interesting: julienned carrots, cucumbers, zucchini, etc.
