My “clean” eating challenge is going so-so. I have had a few mishaps. The trouble comes with eating healthfully while working. I really need to work on preparing and packing my meals. Working overnight shifts also makes me crave really bad food! I have noticed a pattern of eating at least one candy bar per shift. I think my body is asking for energy, and my mind immediately answers with a chocolate craving. I’m thinking it’s time to stock up on fresh fruit and maybe whip up some kind of energy bar.
It’s a completely different story when it comes to eating well on my days off. I have been successful at throwing together “clean” and tasty meals. Even Husby has been easily transitioning into the challenge.

Zucchini noodles and Stuffed Flounder
This is where I found the inspiration:
I used zucchini instead of squash. It tasted great! My husband is a die-hard pasta eater, and he LOVED the veggie noodles. The sauce and fish came for Trader Joe’s. Overall, dinner was a success!
