Things Remembered

Today is a day to remember and honor those that have served and given their lives for our country. Many of us will be outdoors, manning the barbecue grill, and pounding beers. Others will be in foreign lands, manning a combat vehicle, or pounding the pavement to keep their countrymen safe. Some may lose their lives or limb. Let’s not forget them.

Dad in Vietnam

My Dad served in Vietnam. While most boys were drafted to go, my father volunteered. I have the highest respect for his bravery, and am so thankful for his safe return. Today, I will honor the memory of those that sacrificed their lives.

I’m sure that Dad is going to be grilling today. My favorite childhood memories involve barbecues and get-togethers. Daddy loves to throw down on some ribs and chicken!

In honor of Dad, our Pre Memorial day dinner:

Tomato Salad with Spinach and Goat Cheese

Honey Balsamic Chicken & Roasted Sweet Potato Salad

One of Dad’s favorite vegetables is the sweet potato. Sweet potato salad is a delicious alternative to traditional potato salad. Roasted sweet potatoes are even better!

Here’s my recipe:

2 medium-sized sweet potatoes, sliced into 1/2″ thick rounds

1/4 cup of sunflower seeds

1/4 cup of dried cranberries

2-3 tablespoons of mayo

1/2 cup of sliced onion (red or Vidalia)

1 tbsp. Apple Cider Vinegar

Toss the sweet potato in about 1 tbsp. of olive oil, sprinkle with salt and pepper

Grill on both sides for about 10 minutes, or until soft…not mushy or burned

Cool

Whisk mayo and vinegar together

Cut potatoes into cubes

Gently fold into mayo and vinegar, add onions, sunflower seeds, and cranberries

Refrigerate for about 30 minutes

Enjoy!

A Day of Ice and Fire

I’m such a Game of Thrones nerd! Such a great saga, and full of strong female characters. LOVE IT!

Speaking of female characters, yesterday I channeled my inner “40′s housewife”. I bought some fresh produce from the farmer’s market, stocked the pantry, and made a bangin’ dinner! I tend to over purchase when it comes to fruits and veggies, so I decided to freeze some.  The web is loaded with several suggestions on how to prepare and store your produce.

The method I chose recommends “blanching” your veggies and then freezing. Check out the video below. The host is something else! I used a steaming basket instead of submerging my vegetables into the boiling water.

Now I can enjoy fresh veggies, out of season.

The second part of the day involved FIRE. The weather around here is perfect for outdoor fun. Fresh veggies + 80 degree weather= Grilling outdoors!  This is one of my favorite activities, and I must add that Husby is touched with the pyro gene.

Dinner consisted of Herb and Peppered Pork steaks, grilled vegetable salad with pesto, and grilled corn. Super tasty, and somewhat on the Paleo diet side of things; but definitely one “clean” feast!

Not Your Ordinary Noodle

My “clean” eating challenge is going so-so. I have had a few mishaps. The trouble comes with eating healthfully while working. I really need to work on preparing and packing my meals. Working overnight shifts also makes me crave really bad food! I have noticed a pattern of eating at least one candy bar per shift. I think my body is asking for energy, and my mind immediately answers with a chocolate craving. I’m thinking it’s time to stock up on fresh fruit and maybe whip up some kind of energy bar.

It’s a completely different story when it comes to eating well on my days off. I have been successful at throwing together “clean” and tasty meals. Even Husby has been easily transitioning into the challenge.

Here’s last night’s meal:

Zucchini noodles and Stuffed Flounder

I used zucchini instead of squash. It tasted great! My husband is a die-hard pasta eater, and he LOVED the veggie noodles. The sauce and fish came for Trader Joe’s. Overall, dinner was a success!

I Run These Streets

What a weekend! I ran my first ever 5k, and finished well under my goal time of 45 minutes. Yeah, I know, 45 minutes is not a lofty goal; but I’ve never been much of a “runner”. As a matter of fact, I hated long-distance running! I’m a sprinter. I like short bursts and super fast times. Well, I USED to be a sprinter…that was over 20 years ago; but mentally I’m a sprinter. Ha!

Anyways, I ran the inaugural “Free to Breathe” 5K. It was not as bad as I was expecting it to be. I was running solo, and without a cheering squad. The Husby had to work all day; but he wore my Free to Breathe bracelet for good luck. I was surprised at how un-nervous I was. I started the race with a 2 minute, brisk walking pace. MANY runners were zooming by. As much as I wanted to start running, I held back and just warmed up. Once my 2 minutes were up, it was time to run! The course was pretty hilly…it sucked running those inclines. I stayed within a comfortable pace, and started passing folks. I got excited. I ran faster. I passed more people! I was having fun.

I finished the race with a sprint. Final time: 37:26. Not bad. I am in love!

This is Happening

My reluctant gardening effort is starting to thrive! I’m trying my best not to obsess about watching sprouts emerge from the dirt…really trying here.

I also decided that one lettuce crop wouldn’t be enough, so I planted a lettuce bowl too!

And…the Calla Lillies look so happy now! They were looking a little miserable in the backyard, so I dug them up, repotted them, and moved them to the front walkway.

Watching Weight (of the Nation)

Dinner was a  ”throw together and sautee something” kinda meal. I worked an overnight shift, and didn’t really sleep well. I am dragging ass! Surprisingly, dinner was not offensive…and it was an almost clean meal! The veggies were farmer’s market finds; but the pork loin and pasta were not. It’s a work in progress.

Here’s what I did:

Slice a couple of spring onions (they look like green onions on steroids), about 1/2 cup

3 cups of spinach leaves

2 cloves of garlic, minced

2 cups of Baby bella mushrooms sliced

1 pork tenderloin, slice about 1/2 inch thick (seasoned with salt and pepper)

  1.  Brown your pork loin in about 2-3 tablespoons of olive oil. You may have to do it in batches…depends on the size of your pan.
  2. Once the edges are a little brown, remove from the oil.
  3. Add your garlic and onion to the heated oil, and sautee ’til wilted.
  4. Throw in your mushrooms, and continue to sautee.
  5. Add the pork back into the pan, and dash with some rubbed sage.
  6. Reduce heat, add about 1/2 cup of Half & Half (fat free), simmer for 15 minutes.
  7. Add your spinach the last 3 minutes of cook time.
Serve with pasta or whatever carb you like.

Mid-Spring Cleaning

It’s the middle of Spring and the King’s Street Farmer’s Market is bumping! I mean really, like, no parking and tons of little old ladies with baskets full of produce. I witnessed an almost altercation between two women, over a batch of South Carolina strawberries!

I love the market. It’s a great place to get local/regional produce at blockbusting prices.  Here you can find vine ripened and heirloom tomatoes, fresh fruit, and even hydroponic basil. I walked out of there $23 lighter; but weighed down with bags and bags of veggies!

Farmer’s Market Bounty

This is going to give me a great start on my Clean Eating Challenge. My goal is to transition into “cleaner” eating (and living) over this Summer. I have a partial commitment from Husby; he’s not bending when it comes to bread. He did compromise by getting a gym membership for us! I’ll take that as a win.

Banh Mi. Oh My!

I’m not into bread. I hate how it sticks to my teeth and the roof of my mouth. I especially don’t dig white bread. I will occasionally indulge in some whole grain or some seedy rye bread. I like my bread on the dense side. It needs to feel like a piece of lead. I’m not anti-carbs; I just don’t really dig bread.

However, I have been obsessed with ethnic sandwiches. I had a dream about making Cuban sandwiches. Except, my dream Cuban consisted of roasted pork, apple slices and brie. I have yet to try making that concoction; but man, was it good…in my dream! Another ethnic sandwich I been dying to try is called a “banh mi”. It hails from Vietnam, and it’s all the rage these days. Lucky for me, there happens to be an Asian Supermarket/Mall in my neighborhood. There’s a little sandwich shop tucked away in the corner of this “mall”.

The place is called Le’s Banh Mi. Walking into the mall is a little sketchy. I kinda got the feeling like I was going to get assaulted. Yeah, it’s that shady of a place; but once you turn the corner, there’s a brightly lit and clean sandwich shop! The man behind the counter is super friendly and very helpful in making the best selection. I was also delighted to find little desserts that resemble things I enjoyed in the Philippines. The price was jaw-dropping. My sandwich was a mere $3.79…after tax!

Le’s Banh Mi #6

It was the freshest, flakiest, sandwich! The bread was so light and crispy. It didn’t stick to the roof of my mouth. It’s like a petite baguette…only lighter. The grilled pork was the perfect combination of savory and sweet. I really liked the shredded carrots and daikon relish. There is also sliced cucumbers and fresh jalepeno. The cilantro really adds a level of crispy freshness. The drive home was brutal. I wanted to sit in the parking lot and dig in!

This just might make me a believer in bread!

Collecting Dust and Catching Up

Oh my! It’s been a few weeks since my last post. Bad blogger! Well, I took a hiatus…intentionally. I finished my first semester of nursing school with a B! Hooray!! I just needed some time to decompress and do absolutely nothing. That isn’t true. I have been exceptionally busy.

I somehow have acquired 3 part-time jobs. One requires me to work overnight, one involves wet noses and wagging tails, and the other requires slinging tacos and cold beverages. It’s been a little tricky keeping my days straight, and remembering which hat to wear! With that being said, I have been very diligent about making the most of my down time.

There are a few projects on my horizon. I have a photo favor for my friend from A Sensible Habit. She’s got an etsy shop, you should check it out! I’m getting into this running thing…like hardcore! And, as much as I didn’t want to, I started a vegetable garden. I just couldn’t keep my hands out of the dirt!
